- 3/4th cup tightly packed mint leaves.
- 2 green chilies or jalapeno peppers (optional).
- 2 TBSP lemon juice. (This prevents the mint from darkening and adds flavor. You can also use 1 TSP chaat masala instead of lemon juice.)
- 2 TBSP vegetable oil.
- Salt to taste.
Ingredients for Paratha Dough
- 2 cups whole wheat flour. (If you want a more flaky paratha, you can also use all-purpose flour, or you can use whole wheat flour and all-purpose flour in equal measure.)
- ½ cup tightly packed fresh mint leaves, finely chopped. (You can also use spearmint or peppermint.)
- 1 teaspoon carom seeds (ajwain)
- 1 tablespoon vegetable oil
- Salt to taste

How To Make Pudina Paratha (Mint Paratha) – The Traditional Method
Step 1: Make the dough
- Add flour, vegetable oil, and salt in a large mixing bowl. Mix it well.
- Next, add the finely chopped mint leaves.
- Now start adding water in parts and start mixing. You can add more water if required.
- Knead the dough till it becomes smooth and soft.
- Once the dough is ready, cover it with a soft cloth and keep it aside for at least 30 minutes.
While the dough is resting, you can make the mint stuffing.
Step 2: Make the stuffing
- Put all the ingredients for the stuffing in a blender jar and blitz till you get a slightly coarse paste. The stuffing is ready!
Step 3: Cook the paratha
- Divide the prepared dough into equal-sized pieces and roll each piece into a smooth ball. Cover the small balls with a cloth.
- Take one of the balls and dust it with flour. Then start rolling it into a big circle, about 10 inches in diameter.
- Take a spoonful of the ready mint stuffing and spread it evenly on the rolled-out paratha.
- Now, like you would when making a pleated paper fan, lift one edge of the paratha and fold it over itself. Keep doing this until you have a fluted long strip of dough. Seal the edges with a pinch.
- Coil the strip into a tight circle starting at one end. To seal, tuck the other end under the circle and pinch. The paratha may unravel while being rolled if the seal is not tight.
- Then, dust the circle with flour again and roll it into a paratha of about 5 inches in diameter. Keep the paratha thick so it turns out flakier.
- Once you have rolled the paratha, roast it on a hot tawa or griddle with a little oil on both sides. It should be golden brown on both sides.
- Repeat the process for the rest of the dough balls.
Keep your parathas wrapped and covered till you serve them.
